Our Village Recipe Share - Thai Coconut Soup

"This soup recipe is a favorite of every single person in my house (which is VERY hard to achieve). It's super easy and is so comforting. I always double it, because if I didn't double it, we'd have no leftovers because we all love it so much, and I always want leftovers!"

Ingredients (2 x)

  • 6 tablespoons butter
  • ▢2 carrot shredded
  • ▢thai seasoning see below
  • ▢4 cups chicken broth
  • ▢1 bunch cilantro fresh
  • ▢30 ounce unsweetened coconut milk
  • ▢5 pounds deli-roasted chicken from the grocery store, shredded
  • ▢2 cup long grain rice previously cooked
  • ▢2 lime juiced
  • ▢2 tablespoon soy sauce
  • ▢extra cilantro for garnish optional
  • lime wedges optional

Thai Seasoning:

Instructions:

  • Place a large pot on the stove over medium-high heat. Add the butter, carrots, and thai seasoning and cook until carrots become soft.

  • In a blender, add chicken broth and cilantro and pulse a few times, then pour contents of blender into the pot.

  • Add the coconut milk, shredded deli roasted chicken, rice, fresh lime juice, and soy sauce. Bring to a low boil then remove from heat.

  • If desired, serve topped with extra fresh cilantro and lime wedges.
