"This soup recipe is a favorite of every single person in my house (which is VERY hard to achieve). It's super easy and is so comforting. I always double it, because if I didn't double it, we'd have no leftovers because we all love it so much, and I always want leftovers!"
Ingredients (2 x)
- 6 tablespoons butter
- ▢2 carrot shredded
- ▢thai seasoning see below
- ▢4 cups chicken broth
- ▢1 bunch cilantro fresh
- ▢30 ounce unsweetened coconut milk
- ▢5 pounds deli-roasted chicken from the grocery store, shredded
- ▢2 cup long grain rice previously cooked
- ▢2 lime juiced
- ▢2 tablespoon soy sauce
- ▢extra cilantro for garnish optional
- ▢lime wedges optional
Thai Seasoning:
- ▢1 teaspoon curry powder
- ▢0.5 teaspoon cinnamon
- ▢0.5 teaspoon ginger
- ▢0.5 teaspoon chili powder
- ▢0.5 teaspoon paprika
- ▢0.5 teaspoon salt
Instructions:
Place a large pot on the stove over medium-high heat. Add the butter, carrots, and thai seasoning and cook until carrots become soft.
In a blender, add chicken broth and cilantro and pulse a few times, then pour contents of blender into the pot.
Add the coconut milk, shredded deli roasted chicken, rice, fresh lime juice, and soy sauce. Bring to a low boil then remove from heat.
If desired, serve topped with extra fresh cilantro and lime wedges.
